    In celebration of the upcoming Hispanic Heritage Month, we’re bringing you the best recipes from Spanish-speaking countries!

    Today’s recipe comes from Colombia, and it’s a tasty bread made with cheese! It’s a perfect breakfast treat, or to be served as a side dish for dinner.

    Here’s the recipe, courtesy of My Colombian Recipes:

    (8 almojábanas)
    ¾ cup masarepa or pre-cooked white cornmeal, sifted
    2 cups cottage cheese
    1 tablespoon melted butter
    ½ teaspoon baking powder
    ¼ teaspoon salt
    2 eggs
    2 tablespoons milk

    Preheat the oven to 400° F. Mix the cottage cheese and masarepa in a food processor. Add the remaining ingredients and mix well. Divide into 8 equal-size portions and shape into a ball. Place on a greased baking sheet and bake for about 30 to 35 minutes, or until they are golden. Serve warm.
