Today’s recipe comes from Venezuela, and is a delicious cookie/sweet treat. Literally, it means “Coconut Kisses,” and they can be made in less than an hour!

Here’s the recipe, courtesy of The Latin Kitchen:
2 2/3 cups unsweetened shredded coconut
2/3 cup sugar
1/2 cup all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon fine salt
4 tablespoons unsalted butter
4 large egg yolks
Preheat oven to 350F. Line a baking sheet with parchment or foil. In a large bowl combine coconut, sugar, flour, vanilla and salt. Whisk until all ingredients are evenly distributed. Melt butter and whisk into the coconut mixture. Lightly whisk egg yolks and add to dry coconut mixture. Using your hands, mix until a dough forms. Scoop, using a tablespoon, then press dough between palms and form balls. Place balls on prepared baking sheet and bake until cookies are golden and crisp on the edges, 20 to 25 minutes. Transfer besitos to a cooling rack. Cool completely before serving.
